Salads aren’t just for summer… when the days get darker and the nights get colder, just turn up the heat and pack in those nutrients! Dig in to our proper tasty beef and pork Smokey Balls, served on a warm autumn salad of roasted root vegetables and wilted greens, drizzled with a sweet and spicy chinese-style dressing to really tantalise those tastebuds!

RECIPE

Warm Autumn Salad

FIVE SPICE DRESSING

50g Butter
50g Honey
150ml White cooking wine
2 tsp Chinese five-spice

WARM AUTUMN SALAD

4 Carrots
4 Parsnip
4 Raw beetroot
4 Red skin potatoes
100g Raw kale
200g Spinach

GREAT WITH

A hearty dollop of proper apple chutney, to really bring out the delicious flavours in our five-spice dressing

METHOD

Prep the dressing…

Prep the five-spice dressing. Bring the butter and honey to a boil in a small saucepan. Add the white wine and chinese five spice, mix thoroughly. Continue to boil until dressing reduces slightly to thicken, then set aside to cool

Roast the root vegetables…

Cube the potatoes and parboil for 10 minutes. Cube the parsnips, carrot and beetroot, add to a roasting dish with the potatoes. Drizzle all veg with olive oil, sprinkle with a little salt and black pepper, and toss all together to coat. Add the roasting dish to a preheated oven (180C/350C/GasMark4) for 30-40 minutes until crispy on the outside, soft on the inside (yum!)

Cook the Balls…

While the veg is roasting, roll the Balls in a knob of butter to seal and lightly brown, before transferring to the roasting dish with the vegetables for 10-15 mins. Ensure Balls are piping hot before serving.

Mix the salad…

Bring a pan of water to the boil, add in the kale to blanch for 2-3 minutes. Remove the pan from the heat, drain the water. Place pan back on a low heat and add the spinach, kale and roast veg, and mix together. Add a little dressing to the pan, and toss all ingredients together to coat and to wilt the spinach. Continue adding dressing and mixing gradually, to taste.

To serve…

Serve warm autumn salad in a bowl, topped with your Balls. Spoon a dollop of apple chutney on top of the Balls and away you go!
