There’s nothing better than taking a humble meatball, and pushing the culinary boundaries by pairing it with delicious international cuisines. Dig in to our nicely spiced beef and pork Hot Balls, served in a rich and creamy Bhuna curry sauce. Think tomatoes, onion, and more spices than you can shake a stick at. Pop this in the pan, turn up the heat and call your friends around for a supper to share

RECIPE

Bhuna Balls

BHUNA SAUCE

Qty. Item
3 Large white onions
3 Beef tomatoes
400g Chickpeas in brine
4 Garlic cloves
1 tsp Ground ginger
400g Natural yoghurt
1/2 tsp Salt
1/2 tsp Tumeric
1 tsp Medium chilli powder
1 tsp Ground coriander
1 tsp Cumin
1 tsp Hot curry powder

GREAT WITH

A simple side dish of long grain basmati rice and a little fresh-chopped coriander

METHOD

Cook the bhuna sauce…

Chop and fry the onions on a medium-high heat with butter, until soft. Add salt, garlic (diced), ground ginger and enough boiling water to cover the onions. Cover and cook on a low heat for 15 minutes.

When the water has evaporated, add salt, turmeric, chilli powder, coriander, cumin and curry powder. Mix thoroughly and cook out for 5 minutes.

Dice the beef tomatoes and stir through the mix. Cook on a low heat for 15 minutes.

Cook the Balls…

Roll the Balls in a knob of butter to seal and lightly brown, before transferring to a roasting dish in a pre-heated oven (180C/350F/Gas Mark4) for 10-15 mins. Ensure Balls are piping hot before serving.

Finish the bhuna sauce…

Drain the chickpeas and add half to the sauce. Using a stick-blender, part-pulse the mix. Be careful not to over pulse it, you’re looking for a sloppy consistency, not wet. Add the remaining chickpeas and continue to cook on a low heat or a further 5 minutes.

Remove your Balls from the oven. Add Balls into the sauce and stir in the yoghurt Cover and cook on a low heat for a final 5-10 minutes

To plate…

Serve Balls and sauce in a bowl with a side of long-grain basmati rice. Sprinkle over a little fresh coriander to garnish.
